If one changes his/her citizenship to a country other than Canada, would Canada PR be affected? Would PR still be valid (given that residency requirement is satisfied).

No impact and no need to notify IRCC.

However once entering Canada again, the old country passport is no longer valid. The new country passport does not match PR record. Would this create a problem?

It might, but not because of the citizenship issue, but because it may now get harder to determine that individual A on the PR card really is individual A.

My suggestion would be to bring copies of the old (now invalid) passport to show all the information matches. To be clear, I think this is more likely to be a problem boarding planes abroad than at Canadian border (where they'd probably rely primarily on the PR card for identification).

(This would get worse if there is information that no longer matches like names and/or photos very different)

I'm not aware that there is any meaningful way to change. I'd keep evidence of the previous citizenship (eg passport even if expired) so that those looking can see that 'you are you.' I don't think hthis is likely to come up often, but sometimes at airlines it happens.
