Just looking for advice on how I would go about changing the address for my documents? Is it just done on e-cas?

You can do it on ECAS but as extra assurance you can email them with your updated mailing address as well.

hi there , i am done with my experience and thinking to move to different province as a second option for immigration and i will fill out all my forms from Alberta. so is it would be any problem if i fill different address rather than address i have on my pay stubs , T4 and work permit.

No. People move for various reasons. There's also mailing and residence address which are not always the same.

If I remember correctly, in your background information forms you will be providing past addresses so there shouldn't be any confusion.
