Canadian Marrying German Citizen

I am currently engaged to marry a German lady who is living in Germany. Our wedding is going to be in Germany. Just wondering what documents I will need for her to come back with me into Canada to visit while she applies for Permanent Residency.
Is it a big deal to get a visitors extension until her permanent resident application has been approved?
How long does it usually take?
When can she start working in Canada?

Since she is German, she doesn't need a visa to enter Canada with you. She is visa exempt. However, she is a visitor and as such, is not allowed to work.

If she qualifies for a working holiday visa, I see there are still spaces open for young professionals, see http://www.canadainternational.gc.ca/germany-allemagne/experience_canada_experience/index.aspx?view=d For that she'd need a job offer though. She would also have the option of trying to find an employer in Canada and have them apply for a labour market opinion for her. If they get it, she can apply for a work permit.
