I have thought about this a lot and I think Canada is better for the long term if you wish to settle down there and possibly sponsor a parent.
Germany Pros
Seems like a sensible visa application process, this Canada one is a little crazy.
Free, quality education! Not just for you but for your future kids.
English Masters programs.
Seems easier to get into a school, not as complicated to apply as Canada for a Masters no references required most of the time, no contacting professors, a lot of options between universities and technical universities.
Europe/Schengen, lots of places you can travel once in Germany, crazy cheap flights. Fantastic public transport.
Blue card.
Work almost anywhere in Europe if you are a PR.
Mild weather.
Great worker rights 29 day mandatory leave/year, difficult to fire.
LEGAL SEX WORKERS!
Germany Cons
German language is needed to integrate well and for a lot of jobs.
Poor integration into society.
No dual Citizenship.
At least 7 years on PR for Citizenship.
Healthcare not free but is mandatory $$$.
PR situation not as good, lose your PR 6 months after leaving Germany.
Blue card tied to employment, no job no blue card, loose your job need to find another one quickly.
Almost impossible to sponsor your parents to come live with you long term.
Lower salaries (depends).
Crazy housing shortage in some cities.
Serious racism if you are not white especially in some parts of "East" Germany.
Canada Pros
PGWP, "quick" Citizenship at 3 years, some Study time also counts towards citizenship so in as little as 2 years on PR.
Dual Citizenship allowed.
Reasonable PR rules, need to spend at least 2 years in Canada for every 5 year period, so you can leave for 3 years and still be a PR.
Family Reunification Program can sponsor even your grandparents to come over.
Higher salaries (depends)
Free healthcare.
English language everywhere! (Not Quebec)
Possible to work in the US once you are a citizen, (If Trump doesn't kill NAFTA

Something very wrong with immigration department if these forums are any indication.
Expensive especially Toronto & Vancouver.
Expensive education, lots of colleges are of questionable quality and usefulness it seems.
Very/very cold, depending on where you are.
Far from anything else, still need a visa to go anywhere.
Lucky to get 2 weeks leave.
