Canada Immigration requesting more documents, please help!

My spouse applied for PR back in December and I got approved as her sponsor in Feb. We haven't heard anything from Immigration since then until yesterday. This application is being processed in Seoul, Korea.
Yesterday we got an email requesting an updated criminal record, certificates of entry/exit records for her and myself and proof of cohabitation.
The criminal record and the certificates are not a problem to obtain. The proof of cohabitation, however, we already sent them. We sent tons of pictures, notarized statements from family and friends, and letters from landlords confirming that we were living together. That is pretty much all we have as far as proof of cohabitation goes.
Is there anything obvious we missed? That they are asking for more proof, is that an indication that the proof we supplied is not sufficient? This request is very irritating, has someone experienced a similar request?

Also, they want all the specified documents within 15 days, which is impossible for us to get them in that time period as we have to wait for documents to be sent back and forth. Is it possible to ask Immigration for an extension?

Do you have a bill or statement of any kind with both of your names on it that show your address? That is probably what they would be looking for.

Can you type what exactly they requested. I am only asking because sometimes, thats the standard request to ask for one document but is framed in a way that may be understood differently. For e.g. at my VO, they send a Passport request along with Medical and landing fee even when these have already been supplied.

What exactly did you provide for your proof of cohabitation?

My wife and I submitted the following:

1. Copy of our rental contract from 2009-present (future expiration date is Feb 28, 2013) - we lost our old rental contract from 2006-2009, but you can see the difference from the pictures we submitted;
2. Scan of our ID cards for entry into our apartment building;
3. Tons of pictures of us at home with friends, family (both sides), our two dogs, and our son; and
4. Letter from our friends who live down the street stating that they have been to our home many times and know without doubt that our marriage is legit.

We didn't feel it was necessary to get the owner of the apartment to write a letter. If they need further proof, we can do that later, but I'm guessing that what we submitted will suffice.

We also submitted scans of our health insurance cards (for me, my wife, and our son), joint bank account statement, hotel invoices, airline tickets, etc.

I think we covered pretty much everything. It amazes me how anal some of these visa officers can be...but I guess they're just doing their job.
