Hello, I am considering an offer from ICAO in Montreal. I wanted to know if I will be able to apply for Canadian PR while working for the UN and if my spouse will be able to work in Canada. By me being present in Canada while working for the UN, will this count towards the 2 out of 5 years requirement. Is there any material that can be shared in this regard.

Me again... I would once again really really encourage you to read and understand Canada's immigration programs as a first step. Right now you are confusing very basic information. You need to have a basic understanding of Canadian immigration programs.

There is no 2 out of 5 year requirement to apply for PR. This is the residency obligation AFTER you have become a PR. The 2 out of 5 years has nothing to do with applying for permanent residency and nothing to do with your current situation.
 
Research Express Entry as you may be eligible to apply now. For Express Entry, you have to prove that you will not be living in Quebec as Quebec has its own immigration program. So you can work in Montreal but you must live in another province. So research Quebec Immigration too if you plan to live in Montreal.
