Can I use both my parents' statements of accounts as proof of financial support

Good day, even though only my mother is stated as my financial sponsor, I want to use both parents' bank statements to show that I am financially capable of schooling in Canada. If I do so will that mean they are both my sponsors and will I have to obtain letters of sponsorships and employment letters for both?

Yes you can although I advise you to label each account carefully and refer whose account is whose in your SOP

If you are showing bank statements only in your father's name, you need a letter from him confirming he will support you.
