So my husband and I applied for inland PR through family sponsorship in Nov 2018. I'm from Iceland and I don't need a visitors visa to come to Canada and I don't have a work visa but I do have a visitors record while I wait. But I was just wondering if I can travel back home while I wait for the PR card?

While short infrequent trips are usually tolerated (2-3 weeks max) it's important to note that if you were denied entry into Canada (although rare pending you meet admissibility) your application would be abandoned.
