Can I not mention one of my previous work experience?

Hi I am working in Canada from last one and half year. I had previously worked in South Africa for 11 months. I haven't claimed my points for that job. I got an ITA and it's asking me to submit my work experience proof. I have a letter of experience (doesn't mention number of hours or pay rate) but don't have any pay stub or other info. Is letter sufficient or I might will get an inquiry for pay stub? Please assist.

Senior members will guide you better but If you are not claiming any points for your work experience in South Africa you could just mention it in personal history and not in work experience. Explain in loe regarding the same.
