I already have an active EE profile with 426 points at the moment with family showing as accompanying.

Should I / can I create another EE profile for myself while keeping the first one so that if all goes well I can travel with my family as opposed to going by myself?

No - you can't have multiple profiles. You need to change the first one to show your family as non-accompanying.
