I am a Canadian citizen and applied for spouse sponsorship for my husband. Everything is completed. We are waiting for the embassy to update us on the next step and it’s now 5 months waiting. I need to write a letter to request for urgent processing. Can anybody help, please?

If everything is completed, what is your husband waiting? Shouldn't he just go to a Canadian port of entry and land?

The ircc rep said embassy may or may not ask for additional information such as medical or biometric or they may just issue visa but we don’t know yet.

Just apply for the TRV. If it's going to qualify for quick processing, it would get approved quickly. Your written request for urgent processing will already mean it's taken out of the automatic quick processing and take longer anyway.

Or in simple terms: simple TRV (if it qualifies) >> faster and quicker than urgent (*except for rare cases like medical urgency).

No-one will be able to tell you in advance if it will get the quick approval. Best way to find out is to apply.
 
Already applied for TRV after a year of waiting when I applied for spouse sponsorship and it was rejected because the immigration officer was not satisfied he will go back at the end of his stay even though we demonstrated he will go back. Do you think I should apply again?

Don't know enough to say about your situation, and doubt the 'letter' you based this thread upon is going to make much difference. Too many other variables to guess. You have already stated 'everything else is completed'; I'm not sure what that means or what basis you have to think that.

But since you think that, sure, apply for TRV.
