most my documents were in black & white copies. Things with photographs on I printed out in colour (medical documents were in b&w tho and they had my photo on too). I sent them by courier.

I have the same question
I applied for intermediate skilled worker catergory so my job offer did not have an expiry date. I did loose my job in September 2019: I got very sick and my employer was not tolerant of it. I got another job for a while then I went back to school when coronavirus hit and I am self-employed and still live in Canada. I have not had a problem.
