For the past two months I have been researching everything I can about Canadian immigration, but I am still a bit lost on most of it. I am not a lawyer and all of these little caveats on the various permits/visas are become quite frustrating. Basically, I would just like to know that if hypothetically I had a job offer for a position as a Assistant Manager for a Retail store (Which I believe works with the NOC 0, A or B occupation requirement for the FSW program), is the next step to get a LMO from the employer, then apply under the FSW program? I just need to know if there are any steps I'm missing, or if there is a better way to approach this. Thank you in advance!

You are correct. With an LMO you can apply for FSWP as well as a Work Permit to get you started. There are two tricky bits - one is getting a Canadian job offer when not in Canada, and the other is getting the employer to go through the process of getting the LMO. It is a hassle for them.
There are of course other ways - the Quebec programme, going as a Student to get some Canada experience which then helps with the PR programmes, even "investing" lots of money is a possible route.
