Are Seasonal jobs eligable for CEC?

I have been working the same seasonal job (Sports Instructor NOC 5254) for 5 years now, but I only work for 5months of the summer each year. Therefore my months of employment are not consecutive. Am I able to add them up and still be eligable for Canadian Experience Class?
- Also my boss would like to write me a job offer letter for future employment with the company. Will this be accepted?

Unfortunately not. The work experience now has to be consecutive (meaning there can't be a break).

Does it have to be consecutive for 12 months for Canadian experience Class or Federal Skilled worker or both?

Neither, but it's a requirement of Express Entry. Go figure.
