Hi,
I am in Canada Since September 2019. I completed one year in Canada now. I want to apply for a super visa for my parents. I need clarification on the following point.

My income in 2020 is sufficient to meet the minimum necessary income requirement for super visa but I am taking EI since two months. Am I eligible to apply a super visa for my parents when I am availing EI?

I am seeking guidance, please.

You can certainly try but CIC prefers NOA to show income earned to see if you met LICO. Qualifying for a supervisa is based on money earned during one year while in Canada and not your salary. You can try using your record of salary received to see if that is accepted.
