Are you gonna run from when you land to the immigration gates? What about your luggage?

I think luggage pickup is after immigration

I think it's too risky but it's up to you. In an airport, you should also prepare for the worst situation not the best in my opinion.

I asked Copa Airlines and it is not required to board that flight to have the pre-booked three day hotel.
