My mother is coming on visitor visa. She is illiterate.
1. Do they held interview on airport?
2. Can she present letter with information instead of giving interview?
3. She is coming to visit me and my family, is that OK if I go there to bring her?

1. Yes at least immigration.
2. Yes include information and explaining she is illiterate.
3. No you can't enter the airport to collect her past the arrivals area. I assume you will be requesting a wheelchair with the airline.
 
She will need to fill in custom forms correctly and answer basic officers questions correctly, there isnt any other paperwork and there is no interview.

In Toronto at least the custom form is now done through a touch screen terminal which can be confusing even for technically capable people. Its something like this but not exactly
 
^ She is not required to use the electronic kiosks if the airport has them (she is illiterate after all); she can hold a letter explaining her situation and an airport/airline official can guide her directly to a CBSA officer. She still may have to clear interviews with an interpreter.
