The Canadian embassy would like applicants like myself to provide additional information to prove that the relationship is genuine and continuing such as pictures, phone bills, letters and the like..

my question is: Do they give back these documents after processing? I do not mind giving our pictures away because i have digital copies of these but i am just concerned about our letters to each other, movie tickets, plane tickets or just any special event ticket.. I just feel like these are very important memories wherein one would want to keep the original tickets issued. Are they going to give this all back?

you can always make copies of these items instead of the originals
 
Some people say they get their stuff back, some don't. I'd make copies to be safe.
 
I'd send copies of that stuff. We sent original photos and photocopies of other documents, didn't get anything back at all (but other people from our visa office did, so it's a bit hit and miss).
 
yes, copy is the way to go.

We will be sending all original bills and pictures (we have the digital's already) and things but the sentimental items, cards and newspaper cuttings etc, have been scanned and printed.

I'm sure that if the IO really wants to see originals, they would call for it as additional information or request it to be bought to a interview if required...
 
we applied out of Kingston, Jamaica and all things that were returnable were returned to us... the only things that weren't returned were our pictures, but they printed copies of digitals on 8.5x11, 3 or 4 to a sheet.... guess it wasn't the end of the world....
 
London returned my stuff (ive not actually checked what they returned) when i made a list of everything i'd sent in the application etc then with the proofs i'd written by them 'would like returned if possible' & 'have original copys' etc so mabe that had some influence
