Can I leave Canada on vacation for 1 week if I have sent in my Medical results and I am waiting for the last bit of the process to be completed while on a BOWP??

Or must I remain in Canada until the process is complete and I have PR status?

It's not practical to require applicants to stay inside while application is being processed. I have not seen or heard of any such requirement either. Feel free to leave and come back but make sure you meet the usual entry requirements.

That's actually the case for inland spousal sponsorship (you leave the country and they assume you've abandoned the application) - however for the CEC class this is not the case.
