As per research on the internet and checking CIC website, I think we can change the spouse status to Accompanying. It will not harm PR application until our CRS score is above 75.

I am in the same boat, could you please let me know did you also add LOE when modified the status.

YES MGU Meghalaya's degree is considered by WES. I've got done for my degree by WES.
