As of May 9, my Prohibitions, Physical presence and Language skills have been marked as Completed. So right now, all parts of my Application status show as Completed (except Citizenship ceremony will shows Not Started). Roughly how long will/may it take until I receive my oath letter?

It's unlikely they'll ask for receipts/rental agreements - but yes, you should mention the AirBnB address since you had no other address at the time and they specifically state you cannot leave in any gaps.

I'm confused about my application. I sent it by paper mail on June 28 and received my AOR on October 3. On October 12 I received a link to the tracker. However, in my application history it states they "begun to process my application" on August 23?

The website doesn't specify. I can't say for sure, but this requirement has existed for a long time for Work permits/PR and I have always submitted just the pages with stamps/visas while leaving out blank pages, without issues (I've had 2 Work Permits + PR) I assume the purpose of these pages...
