I dont think a stock statement from a trading website will suffice. I believe stocks can be shown , however you will need to get a statement on a letter head from the bank/NBFC where you hold your demat account.

The idea is to show that you have the minimum funds as mandated by IRCC. Single or multiple accounts do not matter. Also , your credit card information is not required.

You can mention the role you were performing , the key there is to make sure the responsibilities match the NOC description. Role can be called anything , it doesnt matter

Do you mean you got a PCC issued from your home country and then moved to Canada and the applied under EE? The PCC has to be issued after the last time you were in the country. For current country of residence it can be up to 6 months old at the time of submission of e-APR
