The calculation is from the date you have submitted for the PR card. Each time is always, five years from the date today. Just make sure you only apply for PR extension after you have completed 2 years in the country in the past 5 years. Good luck.

If you come in Jan 2017 and continue to stay up to 2 years, there is chance for you to get this status kept. But you should not leave Canada for 2 years ideally until Jan 2019. I do not think you will be sent back in June 2018.
