yes that will work. The letter must mention your position, full time employment and salary. However if you can get latest T4 if not latest pay stubs ( 2 to 3 ) then include that as well.

Processing time posted at CIC website is estimate only. Based on my recent experience for my Parents visa and comments from others on the forum it is taking more than 30 days in most cases.

No Medical was not required for my case. However while reviewing this forum , I noticed some said they were asked for medical even for Tourist visa. So it depends on the visa officer if they feel a need.
