As long as your employment is full time and paid then yes you can apply for it. To Prove your Experience you need to have Employment letters specifying your position in the company, your roles ( roles should match with the roles & duties under whatever NOC you think your eligible for).

If the duties under 3 different position that you worked for comes under one specific NOC , then YES you can claim points for 7yr of Experience or if your duties under these 3 positions contradicts then you go for the one for which you have maximum experience and apply under that specific NOC.
