You would be able to continue the application, however, it will be rejected as you do need a job offer to qualify for the Category A stream.

I believe you'll need to request IDP to send the results straight to NBPNP when you get your documents ready. You only need one copy of your IELTS results for PR.

True, but I personally would get everything ready for that first ITA. The second one might just not happen or NB decides to close the PNP for a while and then it's a waiting game again. ;)

The profession would be your NOC code & the results would be your IELTS results. This should be mentioned in the subject of the email. example: NOC xxxx; IELTS results: Reading X; Listening X; Writing X; Speaking X

I think they'll only accept those occupations listed on their website for "out of country" visitors & NOC 1111 is not on there. If you've got bookkeeping experience then it may be worthwhile changing your NOC to 1311? Google "Canadian resume format" there are plenty of samples on the net.
