if I click Continue after getting all form's status Completed, and move forward to upload documents, can I still go back and update form's informations?

I got a letter of reference from a client whom I worked for ~2 years as freelancer and without a written contract, however I can't prove exactly the amount he stated. Is only the letter enough, once it is signed and have the contact details or I can be inquired to prove it?

During a period of 5 months, I worked full time for 2 different employers, it was hard but necessary period of transition. Can I log this as it is?
