what if you have an Open work permit? In that case does the employer need to do any formalities or they can just hire you directly as they would any other canadian PR/citizen?

If you are in India they have a consent form on the vfs website, fill it up and get it signed by your parents if they can not go themselves

I applied online , it was processed in New Delhi. Although took total of around 26 days to get passport request.

If they are visiting before december they can bring along old passport which has valid canada visa along with new one.

I also applied online, i got a second email from new delhi office after about 15 days, then one more email from delhi office that application is in progress and i think eligibility review also started with this email, got passport request after couple of days after this.

that shouldn't matter, if you are providing an invitation letter then they can put your info. There is no restriction on where they can go.
