I think your Canadian based company's letter is more than sufficient to prove your intention. Make sure you send this letter soonest possible (in email as attachment after scanning to CIC) if not sent already.

Why did they ask you for proof of address? Were you from Quebec and applied under CEC for Ontario?

When you sent an email to CIC, did you send all three 1) applicant's full name, 2) date of birth and 3)file number OR just the file number? I only send the application number, maybe because of this they did not bother to even search for it.
