Good point. I just realized it is updated to reflect 30-60 days now. My assumption here is this would be from start to finish stages, so basically submitted through nomination. We're all in the same boat and just need to play the hard game of patiently waiting, which can be a little cumbersome.

According to OINP's website, the estimated processing time is 60-90 Days, which I presume is from application submission date to final decision. https://www.ontario.ca/page/oinp-application-processing-times-and-nominations-issued

My status has also changed to "Assessment". Thanks to the status update from @gshin89 which made me check and confirm my own.
