yes are eligible to create profile even you can get invitation. Minimum 6 months experience is required for STEM.

I am trying to add my spouse work experience but not sure why it is not updated in GC. Is it ok to create new profile ?

Not sure whats wrong with IRCC .. SOWP is coming faster than earlier and extension had been stopped completely.
