    You both/all can submit evidence of completing education (university or high school both qualify) in English language. I should think from UK that would just be whatever you have from either, they're going to understand the medium of instruction is English. Or for you the language test...

    You could potentially have problems on return, but with a valid card and living in Canada - probably will be okay. Upon your return - just stay in Canada until you are in compliance before applying to renew.
