If you have a COPR number assigned, your application is most likely approved but still have to go through a few more steps to get the official document (ECOPR). You can check that in the PR Tracker.
I analyzed the data of 32 inland applicants that received P1 in June. These are the times it took them to get P2:
Average: 34 days
Median: 37 days
Minimum: 3 day
Maximum: 52 days
They are not linked, sometimes you'll get one updated but not the other one.
I got FD on June 18th, P1 on June 19th, but my tracker only updated "background check completed" until July 11th.
I received P2 today but my GCKey says eligibility is still in progress and PR tracker says...
That's what I meant. One email from the principal applicant's account replying the information of both of you. That's what I did and I just received P2 today.

When did you get P1 email? Do you have a valid work permit other or are you on maintained status waiting for BOWP?
From P1 to eCOPR (which is when you officially become a PR) you may wait 2+ months. If you're on maintained status, you run at the risk of loosing status, which may affect your PR...
If you didn't go through immigration, it means you didn't enter the country. So no, you don't have to mention it.
But if you had to go through immigration, even if you didn't leave the airport it would still count as you enter the country, so you would have to mention it as "transit"
You're not "that screwed" as you still have 2 years on your PGWP. But you must choose a path wisely. 475 points won't get you an easy invitation through express entry these days. Waiting game is not an option.
The obvious bet is to learn French. I've seen people get the required level to...
NOC 21301 - Mechanical engineers does mention "fluid mechanics engineer" as one of the illustrative examples. I don't think there's a more specific NOC for your position, it should be covered under mechanical engineer.
