Why is it not safe if you're applying for SIN in person? Service Canada won't send any documents to the address, you get them straight away during your appointment. Unless you meant it for online application only but the post was about an in-person appointment.

A letter is sufficient. Additional docs are only helpful if you cannot provide what IRCC requests (e.g. the company doesn't exist anymore and you can't ask for a letter, then you could provide your employment contract and pay stubs)
