In total, your experience is 12 months or more. It doesn't matter if there was a gap in between. Another scenario- You worked for one employer for 8 months and another employer for 4 months. It still meets the minimum 12 month criteria.

Do you have a new job offer on hand or did you say 'yes' only on the basis that you are already working for past few months? If it was the later, you should have said no.

In-land spousal PR is not faster. It takes close to 24 months. Also, your timeline is very tight. I would recommend going with express entry.
