Changing jobs after ITA received

Good evening,

I received an invitation to apply for the Canadian Experience Class. I have been working for more than a year in a restaurant and my profile was based on that experience. Now I am gathering the documents that were requested, but a few days ago I got an interview for a job I applied long time ago and it may work this time. However, I don't know if I would be able to take that job if I am in the middle of sending the documentation after receiving the IAT?

I have read that after sending the documentation I can change jobs without a problem? or until when do I need to stay in my current job to not have problems with my application process.

Are you on open wp? If you already meet the needed experience in your current work and did not claim points for job offer. You can quit your job and transfer.

Thanks for your response, I am on an open work permit, I got a PGWP after finishing my bachelor and did not claim points for a job offer, only showed that I have been working in the restaurant for more than a year since I got my PGWP.
