Do you need the physical documents for letter of past employment?

I think you should ask them to send the letters by mail to you in addition to scanning the signed letters. I‘ve read on here that when you finally land in Canada, the immigration officer might ask you to show some of the documents that were part of your application. Not sure which ones on top of proof of funds but better be safe than sorry.

Its safer to have the originals with you but since everything is processed electronically in my case at least I never had to provide originals.
So in my case it's a client that I had an intership with. So he is providing two letters, one for the internship and an affidavit as a client. The problem is that I thought he had sent the letters 2 weeks ago but he clearly has not. I keep bugging him with it because I have everything ready to go and I don't feel like waiting another two weeks or more just for the letters, he can scan them and send very easily and would rather do that. And at the same time I can't be too pushy as he is still one of my biggest client and I want the relationship to stay pleasant.

Can you maybe try to sort it out with their assistant or secretary? Ask them to get it resigned, scanned and emailed to you directly.
Do you have an email trail with this client? Worst case scenario, you can provide the unsigned letters + the email trail, and explaining in a letter that they said they sent it but you still havent received it and that you followed up to no avail.
Is there anybody else you worked with there who can sign an affidavit? Some colleagues signed me affidavits to prove my current work experience because I couldnt ask my employer (for obvious reasons). It worked fine.
Bottom line if you are stuck in the process because of it, try to go around your client and use email trails to show your candor etc.

Yes thank you for your reply! Thankfully it's much less complicated than that because it's a start up (no secretary) and my client is ready to print and sign it for me it's just that he is so busy that he will likely forget to post it many times before really sending it, but as soon as I get the scan I know I can apply. I was wondering if it's worth bugging him for sending it physically via mail rather than just accepting the scanned email version and move on.
If you have scanned versions already I'd say it's enough. Just keep the email trails handy just in case.
I mean if the customs officer asks for those letter at the border (unlikely), whether it's an original or a scan, they still have the phone number and email number of your client.
I myself have just half of the letters in original and the other half in scans only. I'm not worried about that.
Ok then I'll ask him one or two more times and if he doesn't mail them I'll make sure to have the trail all printed out. Thank you!
