My fiancée's parents are waiting to hear back from their third visa extension. They applied in May and were hoping to hear back in November. Due to the events around COVID he does not want to send them back if they are denied. I have read that they will have 30 days to leave after a refusal, but he is considering to appeal this decision to buy them more time before returning. Are there any repercussions he or his parents may face if they decide to appeal? Or is this a good solution to buy more time because of the current pandemic?

You can appeal but after 3 extensions it may be difficult to get an extension if already refused. If they become out of status that can have implications on future travel and depending on how long they have stayed there can be concerns about the amount of time spent in Canada. Would suggest you reassess once you get the answer.
