I have booked a ticket with Air Canada couple months ago and recently they cancelled a leg of my flight, and offered a reschedule which means I'll board the flight 4 days after my term begins.

Is this OK with immigration considering we have received emails confirming it's OK to study online? Or is it too risky?
 
In that case it will be up to the visa officer. Since you haven't technically been to Canada yet you have no essential reason e.g. rent, belongings, etc. but as per the policy you are technically allowed in. So again, it depends who the officer who looks at your case

While that's inconvenient I don't think it can be classed as essential according to them

Of course, agreed. But you are allowed in, that's the policy. To travel or not that should be your choice. I think I'd rather seek an earlier itinerary not to complicate my case further, having already deferred last year.
