This link says "Ask a Canadian border officer when you enter Canada." to find out "how long you’ve been in Canada". However, my ICES report explicitly says they do not have exit records.

Can the border officer still find out ?

Land or air ? There are always ways for a government to find out, maybe not necessarily realtime at the border but there will always be a record somewhere even flight manifests for example.

In any case misleading a CBSA officer at the border by lieing about time away not really advisable, not saying your plan

Would add that exit records are in the pipeline so will hopefully be recorded soon. There are other ways to determine if you have been in Canada.

@Bs65 I was talking about getting records from them .
Well was not clear in your post as you asked if a border Officer can find out which sort of implied you were planning to come to a border and wanted to know if CBSA would see when you left.

See latest here although as said if the government really wanted to find out about exits by air they could probably have some limited capability to request flight manifests but those would not be available to the public

Plan was to start recording air exits for public consumption in summer but whether that now holds who knows
