Hello there,
me a new member of this family here,
if anyone with experience and best knowledge can guide me here
I'm 43 years old professional with a culinary background 19 years of experience. Spouse, 41, as an assistant manager in an insurance brokerage firm, 18 years of experience looking to immigrate to Canada.
What are our chances and shall we even take our chance?

Kindly give the best of your advice to help us in taking the decision.

Age definitely goes against you. But then you have experience in your side. Do you have qualifications also?
An idea would be to check out if you could be eligible for express entry and then to go through the different pnps and check if you are eligible for any of these. Only you will know.
There are less options to emigrate once you get older but it's not impossible.
Cut off age for a many programs is 45 so you would want to get started quickly if you have your heart set on it.

and my Wife is Bachelor of Commerce (12+3)
 
After looking into your eligibility for programs the next thing you should look into doing is you IELTS (language tests) and getting your qualifications assessed for Canadian equivalency. WES is the fastest service)
Unfortunately taking IELTS is a problem for most at the moment because of Covid 19.

I don't think FSW / Express Entry will be an option for you due to your age and level of education. I don't think you will score enough points to be selected. I would recommend that you research the Provincial Nominee programs instead. Good luck.

Will definitely not qualify for FSW. Your CRS will be quite low. If you have good stable position it will be quite difficult to move to Canada in your mid 40s and reestablish yourselves and save for retirement.
