In regards to my Work experience, I do not work at the moment but I have work experience five years in administrative assistant role, can I still use this work experience to apply for express entry as I am currently studying for for masters degree at the moment

Yes you count that experience towards PR assuming that was skilled employment.

But it says on cic website 1year continuous work experience, just want to make sure I can actually this work experience as this is the only work experience I have to apply for within skilled job I left the job since 2017

What CIC meant by that is you can not combine foreign work experience from 2 jobs say 6 months in one company + 7 months in other = 1 year. Whatever experience you show, needs to be continuous.
