I have ordered a GCM notes about 12 days ago, thinking, if I can check it around 30 days later about my application, it will be great.

But now that I think about it, since I ordered GCM notes on April 6th, will the notes only tell me the progress till April 6th? or is it the progress that actually happened on the day I got it?

for e.g

Order on April 6th-> Results based on my application status till April 6th

or
Order on April 6th-> Results received on May 6th, and the results are based on the progress until may 6th?

It will only contain information up to the date that the ATIP officer collected it. The policy appears to be that ATIP requests are always delayed until 30 days has elapsed, regardless of when the information was collected.

Looking back at the GCMS requests that I made appears to support the notion that the notes only cover up the date of the request, not the date of delivery.

That appears to be the case, based on the GCMS notes I have ordered over the last 5 years.
