I’m from Fiji and did my spousal application on 2016 and I got an email about my interview with an visa officer which will be held next week, the visa officer will be coming from Canada to take the interview. I would like to know what type of questions I would be expecting and will I get the visa on the same day or do I have to wait?

If this is an outland interview, its likely a relationship interview where they dont believe your relationship is genuine and you need to prove it is.

Figure out what your red flags are (large age difference, short courtship before marriage, no traditional ceremony, marriage on first visit, have relatives in Canada, etc) and bring proof to address them

100% agree with mikeymyke!
The delay depends of the Visa office. Some are very fast (few days), others very slow (few months)!
Good luck

I Got a letter from embassy for interview . They asked me to bring documents specially marriage photos depicting all ceremonies , post marriage photos , on going communication proof & status of inviter.

Any suggestion please.

Since they're asking for an interview and they asked you for all that documentation, they are obviously concerned about the genuine nature of your relationship/marriage, though no one can say exactly what they're bothered by. Bring all the documents they're asking for and you can prepare by going through some of the interview threads here, like this one:
