I am separated from my husband and cannot divorce due personal constraints but I have a child with me and I am trying for the PNP program.
Is it possible for me to get a PR of mine as a singular person without my husbands documentation if I opt for an individual PR after which my son can be a dependent?

You can apply without your husband if you can show that you have legally separated. Your husband will have to provide his approval for your son to join you as a dependent and migrate to Canada (unless you have legal sole custody).

You cannot apply as a single person (that would be misrepresentation / lying and would get you banned from Canada). You would have to apply as separated and show documentation to prove you and your husband are no longer together.
