Does this work experience qualify to apply as self employed ?

No - it doesn't. Have you researched the requirements for the self-employment immigration program? They are very specific and only open to specific professions.
Yes I have researched the requirements. Yes it is open to that profession.
But, sad to know from you that this work experience doesn't qualify.

It may count if it's in the right field - what field is it in? Your post made it sound like the experience was in a business / financial / consulting field which wouldn't qualify.

My wife worked in my proprietorship business. Salary was paid to her as a Senior Manager.
Her duties includes the following:
Designed several pieces of jewellery and also provided jewellery making support to the artificers of our jewellery workshop.
Does she qualify as a Self employed ?

Self-employed as the name implies means you are employed by yourself i.e you own and run your own business. If however your wife is a co-owner not employee i.e salary earner of your business then she'll qualify. It really depends on how you're able to package and present your application. Is her name listed on the company registration documents? If yes then that will count for something. I hope this helps.
