I got an employment letter from my previous employer and it's sealed with an official company stamp next to the CEO's name but there's no signature from CEO.

Mate if you don't want additional scrutiny of your employment letter by the IRCC case officer, I suggest you to get some kinda signature on it., if not the CEO, may be through HR or another Sr. Mgr, who will may have a signature mandate....
