My working holiday visa expires on May 21, 2018. I moved in with my Canadian boyfriend in April, so our 12 months will be just before my visa expires. What can I do to continue to work while my PR is processed?
 
Three options that I see. You could get married and apply for PR a lot sooner to avoid having to take a break from working. You could also see if you qualify for another IEC (some countries are allowed multiple participations). If your employer is willing to obtain an approved LMIA, you can convert to a closed work permit before your IEC expires.
 
If none of the above options are possible, then you must apply to change your status from worker to visitor, shortly before your IEC expires. This will at least allow you to live in Canada longer until you reach legal common-law status, and can then apply for PR using INSIDE Canada method along with OWP.

Of course this means you need to stop working when IEC expires, and can only start working again when OWP is received (approx 3-4 months after submitting PR app).

Is there any option to apply for common law before the 12 months? We have been in a relationship much longer than that.

No. 12 months cohabitation is the legal requirement. If you're even 1 day short they would most likely reject the application.
