Based on my experience, it shall be processed online and if approved, you shall have to send your passport to Consulate in Bangalore for stamping.
No actually, I applied from Pune but I am informed that even Gujarat is covered by the Canadian Consulate in Bangalore.
This is also confirmed by someone else who applied from Gujarat
