Hello, my spouse have been working for 3 years as carpenter subcontractor in Canada for the same company. We declare taxes, have pay slips and work letter from that employer.

That counts as Canadian experience? I’m the first applicant

If spouse has CPP/EI/taxes deducted and gets T4 then yes.
